Chicken Cordon Blu

Ingredients/Zutaten

high heat oil
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
8 slices Swiss cheese
8 slices cooked ham
1/2 cup bread crumbs

Instructions/Zubereitung

  1. BEFORE working with raw chicken, reduce the chance of Salmonella poisoning by gathering all ingredients and supplies in advance, and returning food packaging to storage.
  2. Preheat oven to 350° F (175° C).
  3. Coat baking dish with high heat oil
  4. One at a time, place raw chicken breasts in plastic bag tough side down, and pound to 1/4 inch thickness.
  5. Sprinkle each piece of chicken on both sides with salt and pepper.
  6. Place 2 Swiss cheese slices and 1 ham slice on top of each breast.
  7. Roll up each breast and secure with toothpicks.
  8. Place in the prepared baking dish and sprinkle chicken evenly with bread crumbs.
  9. Bake in the preheated oven until chicken is no longer pink, 30 to 35 minutes.
  10. Remove from the oven, and place 1/2 Swiss cheese slice on top of each breast.
  11. Return to the oven until cheese has melted, 3 to 5 minutes. Remove toothpicks and serve immediately.
