Leek and Bacon Quiche
Ingredients/Zutaten
- 1 pie dough
- 8 slices bacon, cut into 1" pieces
- 1/2 cup onion, chopped
- 1/3 cup leeks, white parts, chopped
- 3 eggs
- 2 egg yolks
- 1 cup heavy cream
- 2/4 cup whole milk
- salt, ground black pepper, cayanne pepper
- 6 oz grated cheese (Gruyere or Swiss)
- 1 tsp fresh thyme, chopped
Instructions/Zubereitung
Crust
- Preheat oven to 350° F.
- Roll out dough, sprinkle a little flour into pie pan, press dough into pan, trim of extra, and bake for 15 minutes.
- Remove from oven, poke bottom a few times with a fork, and return to oven f~or about ~10 minutes–until golden brown.
- Remove from oven and let cool.
Filling
- In a bowl, mix egg yolk, milk, cream and thyme.
- Fry bacon until brown, remove from fat, blot dry, and set aside.
- Remove some fat from the skillet, and add leeks, onions, salt, black pepper, cayanne pepper, and saite until golden brown. (~6 minutes)
Assemble
- Add a layer using 2/3 of the leek mix.
- Add a layer using 1/3 of the bacon.
- Add a layer using 2/3 of the grated cheese.
- Add all of the egg mix.
- Sprinkle top with remaining leek mix, bacon and grated cheese.
Bake
- Bake at 350° F until the center is just set, but still wobbly (~30 – 40 minutes).
- Remove and let cook for 20 minutes before slicing.
