Tahini Sauce

Ingredients/Zutaten

4 medium cloves garlic, pressed or minced
1/4 cup lemon juice
1/2 cup tahini
1/2 teaspoon fine sea salt
1 pinch ground cumin
6 tbsp ice water, more as needed
Optional
Red bell peppers, chopped
Parsley or cilantro, chopped

Instructions/Zubereitung

  1. In a medium bowl, combine garlic and lemon juice. Let rest 10 minutes to give the garlic time to infuse the lemon juice.
  2. Pour through a fine-mesh sieve into another bowl.
  3. Press the garlic solids with the back of a spoon to extract the liquid, and discard the garlic.
  4. Add tahini, salt and cumin, and whisk until blended.
  5. Add water a little at a time, and whisk until smooth.
  6. Add optional ingredients.
  7. Adjust flavor as needed. Add lemon juice for more tang. Add salt to increase overall flavor.
