Tahini Sauce
Ingredients/Zutaten
- 4 medium cloves garlic, pressed or minced
- 1/4 cup lemon juice
- 1/2 cup tahini
- 1/2 teaspoon fine sea salt
- 1 pinch ground cumin
- 6 tbsp ice water, more as needed
Optional
- Red bell peppers, chopped
- Parsley or cilantro, chopped
Instructions/Zubereitung
- In a medium bowl, combine garlic and lemon juice. Let rest 10 minutes to give the garlic time to infuse the lemon juice.
- Pour through a fine-mesh sieve into another bowl.
- Press the garlic solids with the back of a spoon to extract the liquid, and discard the garlic.
- Add tahini, salt and cumin, and whisk until blended.
- Add water a little at a time, and whisk until smooth.
- Add optional ingredients.
- Adjust flavor as needed. Add lemon juice for more tang. Add salt to increase overall flavor.
